1 kg lamb (cut into pieces)
3 tbsp ghee or vegetable oil
1 large onion (sliced)
3 cloves garlic (minced)
1 thumb-sized piece ginger (grated)
2 tomatoes (chopped)
1 tbsp tomato paste
1 green chili (optional, for heat)
2 dried lime
2 Bayleaf
2 cinnamon stick
5-6 pcs cardamom
5-6 pcs cloves
1 tsp ground coriander
1 tsp ground cumin
1 tsp paprika
½ tsp turmeric
½ tsp ground black pepper
½ tsp ground nutmeg

2 cups long-grain basmati rice (rinsed and soaked for 20–30 minutes)
3 ½ cups lamb stock (from boiling the lamb)
2 carrots (grated or julienned)
¼ cup raisins (optional)
¼ cup slivered almonds (lightly toasted, for garnish)
2 medium ripe tomatoes
1 small onion
2 garlic cloves
2 tbsp olive oil
½ tsp ground cumin (optional)
½ tsp sugar (optional)
Juice of ½ lemon or 1 tbsp vinegar
Small handful of fresh coriander

Prepare Dakkous by blending tomatoes, onion, garlic, tomato paste, olive oil, salt, ground cumin, sugar, lemon juice or vinegar, and fresh coriander until smooth.
