Take a large piece of fresh jackfruit and separate the jackfruit arrows from the fruit.

Wash the jackfruit arrows and keep them aside.

Remove the seeds from the jackfruit arrows and chop the pulp into small pieces.

Add half of the chopped pulp to a mixer jar and grind it into a fine paste; keep this aside.

In a large kadai, add 1 tablespoon of ghee and roast a few cashew nuts until golden brown; keep them aside.

In the same kadai, add a few raisins and roast them until they plump up; keep them aside.

Add 1/2 cup of semolina to the same kadai and roast it slightly; keep the roasted semolina aside.

Add another tablespoon of ghee to the kadai and add the ground jackfruit paste; sauté this in ghee to enhance the flavor.

Add the leftover chopped jackfruit pulp to the mixture and mix well.

Add 2 cups of water to the mixture and stir.

Add 1 teaspoon of cardamom powder and 1 tablespoon of saffron water to the mixture.

Add the roasted semolina to the mixture and mix immediately to avoid lumps.

Once the semolina is cooked, add 1 cup of sugar and mix until the sugar has melted completely.

Add another tablespoon of ghee for flavor and mix well.

Fold in the roasted nuts and raisins into the mixture.

Add another tablespoon of ghee for a glossy texture and mix well.

Turn off the stove and serve hot or at room temperature.
