Lamb Shanks with Mandi Rice

Originating from Yemen, Mandi is a traditional dish often served during special occasions and gatherings, showcasing the rich flavors of spices and slow-cooked meats. The dish reflects the region's culinary heritage, emphasizing communal dining and hospitality. Today, Mandi has gained popularity beyond Yemen, with variations found in many Middle Eastern countries and even in Western kitchens.

Sear the lamb shanks in oil over high heat.
Add all the above ingredients and water and cook on medium to low heat for 3 to 5 hours, or until the meat is completely tender.
Place a burnt coal over aluminum foil, drizzle with oil and let it smoke for 30 minutes.
Wash and soak the rice.
Fry the chopped onions in oil until golden.
Add all the above whole spices, the crushed garlic and green chili.
Add the salt and the rest of the spices.
Add the rice and cook on high heat until all the liquid is gone and then put on low flame until the rice is done.
Put the lemon juice on the prepared rice and smoke with the burnt coal.
Heat oil in a pan.
Add peeled potatoes, salt, tomatoes, and peppers.
Cook over low flame until the potatoes are done.
