Gather ingredients: onions, tomatoes, habanero chili, garlic, ginger, cumin seeds, anise seed, peanut butter, and spent hen.
Prepare the spent hen by removing any hairs and feathers, and wash the chicken pieces with lime juice.
Place the cleaned chicken pieces into a clay pot for cooking.
Blend garlic, cumin seeds, and onion together.
Add peanut butter and a bit of water to the blender, then blend until smooth and add to the pot.
Add two large fresh tomatoes and one onion to the pot, mixing everything together until well combined.
Cook on the lowest heat setting to allow the chicken to absorb the flavors for 20 minutes, stirring occasionally.
Check for bubbling and foam on the surface; allow to simmer for another 10 minutes until tomatoes and onions are soft.
Add the blended onion and tomato mixture to the pot; if using a less powerful blender, strain the mixture before adding.
Season the soup with salt flavored with nutmeg and clove, mixing well to combine.
Allow the soup to slow cook for 30 minutes, checking that the oil settles at the top and the chicken becomes tender.
After 30 minutes, check the color of the soup; it should have a blush color, but may darken slightly during cooking.
Add green chilies for additional flavor and color.
Continue cooking for another 20 minutes until the soup is bubbly and the flavors are well combined.
Finish the soup by adding fresh basil just before serving.
