3 tbsp ghee
1/2 cup water
1-2 tbsp extra water
3 tbsp roasted whole coriander seeds
2 tbsp roasted cumin seeds
2 tbsp fennel seeds
1 tsp whole black peppercorns
pinch of salt
2-3 tbsp mustard oil
1 tsp cumin seeds
1 inch chopped ginger
2-3 chopped green chilies
2 whole dried red chillies
2 tbsp spice-mix
2 tsp asafoetida
1/2 tsp turmeric powder
1 tbsp spicy red chili powder
1 tsp Kashmiri red chili powder
200 ml boiling water
2 chopped tomatoes
salt to taste
5-6 boiled potatoes
1 tbsp jaggery
1 tsp dried mango powder
1 pinch garam masala
1 pinch black salt
2-3 slit green chilies
1-1.5 liters hot water
soaked fenugreek seeds
1 tbsp dried fenugreek leaves
freshly chopped coriander leaves

Take 2 cups refined flour in a bowl

Add a pinch of salt and 1/2 tsp crushed carom seeds

Add 3 tbsp melted ghee to the flour

Mix the ghee with the flour until crumbly

Gradually add 1/2 cup water and 1-2 tbsp extra to form a medium soft dough

Knead the dough for 5-6 minutes until smooth

Cover the dough with a damp cloth and rest for at least 30 minutes

Grind 3 tbsp roasted coriander seeds, 2 tbsp roasted cumin seeds, 2 tbsp fennel seeds, 1 tsp black peppercorns, and a pinch of salt into a coarse spice mix

Heat 2-3 tbsp mustard oil in a pot until smoking

Add 1 tsp cumin seeds, 1 inch chopped ginger, and 2-3 chopped green chilies to the oil

Cook for 1 minute, then add 2 whole dried red chilies and 2 tbsp of the spice mix

Add 2 tsp asafoetida, 1/2 tsp turmeric powder, 1 tbsp spicy red chili powder, and 1 tsp Kashmiri red chili powder

Stir well and add 200 ml boiling water

Cook until oil separates, about 2-3 minutes

Add 2 chopped tomatoes and salt to taste, cook until mushy

Add 5-6 boiled potatoes, roughly crushed

Add 1 tbsp jaggery, 1 tsp dried mango powder, 1 pinch garam masala, 1 pinch black salt, and 2-3 slit green chilies

Stir once and add 1-1.5 liters of hot water

Cover and cook on medium low flame for 20-25 minutes

Add 1 tbsp dried fenugreek leaves and freshly chopped coriander leaves, stir well
