3 lbs bone-in pork chops (preferably wafer thin cut)
¼ cup, plus 2 Tbsp brown sugar
2 Tbsp low sodium soy sauce
2 Tbsp fish sauce
2 Tbsp mushroom powder
1 tsp kosher salt
¼ tsp black pepper
2 Tbsp shallots (finely chopped)
2 Tbsp garlic (finely chopped)
3 stalks lemongrass (finely chopped)
2 stalks green onions (chopped)
2 Tbsp olive oil
2 Tbsp avocado oil (or any neutral oil)
2 Tbsp unsalted butter

Cut ½ inch slits three times in each pork chop so that when you’re grilling them, they lay flat.

Mix all the marinade ingredients together in a large bowl, then add the pork chops.

Massage the marinade into the pork chops.

Lay them flat in a bowl or ziploc bag and marinate overnight.

Remove pork chops from fridge and let sit for one hour at room temperature.

Add oil and butter In a large skillet over medium heat.

Then add pork chops in a single layer and pour half of the marinade juice over them. You will need to do this in two batches. Cook for around 10 minutes or so, occasionally turning them over until you see a nice caramel brown color on each side.

Serve with white rice, sliced tomatoes, sliced cucumbers, a drizzle of fish dipping sauce over the pork chops, and an egg sunny side up.
