2 cups zapayo
2 cups sambo
4 cups agua
2 tablespoons aceite de achote
2 tablespoons mantequilla
1 cup cebolla blanca, chopped
4 cloves ajo, minced
1 tablespoon sal
1 teaspoon comino
1 teaspoon pimienta negra
1 teaspoon orégano
1 cup frejol blanco
1 cup frejol rojo
1 cup chochos
1 cup mellocos
1 cup lenteja
1 cup arbeja
1 cup abas
1 cup choclo
2 cups leche
1 cup crema de leche
1/4 cup pasta de maní
1/2 cup culantro, chopped
4 hard-boiled huevo duro, sliced
4 empanadas de mejido
2 maduro frito, sliced
1 cup queso fresco, crumbled
1/2 cup bolitas de harina
1 avocado, diced
1 ají, sliced
1 cup cebolla caramelizada

Remojar el bacalao por 12 horas para retirar el exceso de sal.

Cocinar el zapayo y el sambo por 10 minutos.

Licuamos el zapayo y el sambo con agua y reservamos hasta que quede hecho puré.

En una olla, colocar el aceite de achote y la mantequilla.

Sofreír la cebolla blanca y el ajo.

Agregar sal, comino, pimienta negra y orégano al gusto.

Añadir el sambo y el zapayo licuados a la olla.

Incorporar el frejol blanco, frejol rojo, chochos, mellocos, lenteja, arbeja, abas y choclo.

Licuamos la leche, crema de leche y pasta de maní y lo agregamos a la olla.

Agregar el bacalao, revolver y dejar cocinar por 20 minutos.

Sazonar con sal y culantro.

Servir la fanesca con acompañantes: huevo duro, empanadas de mejido, maduro frito, queso fresco, bolitas de harina, aguacate, ají y cebolla caramelizada.
