Roti Canai with Red Lentil Curry Dip

Roti Canai, a beloved flatbread in Malaysia, has roots in Indian cuisine, brought by Muslim immigrants known as 'mamas'. Traditionally served with dhal or curry, it reflects the fusion of cultures in Malaysian food. Today, Roti Canai is enjoyed in various forms across Southeast Asia, often accompanied by sweet or savory dips, making it a versatile dish for any meal.

Homemade blends can be tailored to taste and are cost-effective.
Start by adding 1/2 cup coconut milk to a pan and reduce it to extract oil.
Add sugar, turmeric, and five spice powder to the coconut milk and mix.
Pour in 1/2 cup water and mix again to create the Malaysian curry base.
Prepare the dal by adding cumin seeds, mustard seeds, and red chili to a pan.
Add a variety of spices including red chili powder, curry powder, fish curry powder, coriander powder, and hing powder to the dal.
Heat oil in a pan and add crushed garlic to release flavor until golden brown.
Add chopped onion and green chili to the pan and sauté until aromatic.
Incorporate chili paste and the white part of green onions, reserving the green tops for later.
Add curry leaves and chopped tomato to the mixture and sauté.
Add garlic paste and all the spices to enhance the flavor of the mixture.
Add diced pumpkin, carrot, and brinjal to the pan and mix well with the spices.
Incorporate 1 tablespoon of moong dal into the mixture to combine flavors.
Add more water to the mixture and allow it to simmer to meld the flavors together.
Taste and adjust seasoning with sugar, salt, and hing powder, and add tamarind water for tanginess.
For the roti, heat oil on a surface to prevent sticking.
Stretch the dough by hand until it becomes transparent, ensuring it doesn’t tear too much.
Once stretched, fold the dough and press it down lightly to shape it.
Cook the roti in ghee until golden brown and crispy on both sides.
