Preheat the oven to 400°F (200°C).

Line a baking sheet with parchment paper.

Arrange the bacon strips in a single layer on the baking sheet.

Sprinkle black pepper and salt over the bacon.

Bake the bacon in the preheated oven until crispy, about 15-20 minutes.

While the bacon cooks, melt butter in a small saucepan over medium heat.

Add minced garlic and fresh thyme to the melted butter, cooking until fragrant, about 1-2 minutes.

Stir in the Canadian maple syrup and apple cider vinegar.

Simmer the mixture for 3-5 minutes until slightly thickened.

Remove the bacon from the oven and brush the maple syrup mixture over each strip.

Return the bacon to the oven for an additional 5 minutes to caramelize.

Remove from the oven and let cool slightly before serving.
