Mix flour, sugar, and a pinch of salt in a bowl.
Add chilled butter and mix until the texture resembles wet sand.
Slowly add vinegar and then water while mixing until a ball of dough forms.
Transfer the dough onto a board and mold it, then cut it into two pieces.
Wrap each piece in Saran Wrap and shape into discs; chill in the refrigerator.
Heat a pan over medium heat and add a little olive oil.
Sweat the chopped onions and garlic until fragrant.
Add ground beef and ground pork to the pan and cook until browned.
Stir in chopped potatoes, breadcrumbs, a pinch of salt, cinnamon, nutmeg, and fresh sage; mix well.
Remove the filling from heat and let it cool slightly before transferring to a bowl.
Flour the board and both sides of the dough; roll it out using a rolling pin.
Cut out circles from the dough and place them into ramekins, pressing to fit snugly.
Trim excess dough and create a lip around the edges.
Pinch the edges for a crimped design.
Fill the crust with the cooled filling, packing it generously.
Cut out a maple leaf shape from the dough and place it on top of the filling.
Brush the top with egg wash.
Bake in the oven at 375°F for 40 minutes.
