Make the pie dough by pulsing together 2 1/2 cups flour, 1 teaspoon baking powder, and 1 teaspoon salt.

Add 75 g lard and 75 g butter to the flour mixture and pulse until it resembles a grainy meal.

Turn the dough out onto a clean surface, divide it into two portions (about 2/5 for the bottom and 3/5 for the top), and shape into discs.

Sauté the onion in a skillet over medium heat for 5 minutes until soft, then add the garlic and sauté for an additional 2 minutes.

Prepare 900 g of ground pork and 350 g of potato by boiling the potato in chicken stock until fork tender, then drain and set aside.

Add the ground pork to the skillet with sautéed onion and garlic, and cook until browned, scraping the bottom for flavor.
