Measure 2 cups of mashed potatoes, packed tightly.
Add 2 cups of sugar to the bowl.
Pour in 3/4 cup of milk.
Add 2 eggs to the mixture.
Add 1 teaspoon of vanilla extract.
In a separate bowl, combine flour, baking powder, and salt.
Gradually add half of the dry mixture to the wet ingredients and mix well.
Add the remaining dry mixture and mix until combined.
Lightly flour the surface for rolling out the dough.
Roll out the dough to a desired thickness.
Cut the dough into doughnut shapes, ensuring the holes are large enough.
Heat oil in a deep fryer to 350°F (175°C).
Fry the doughnuts in batches for 2.5 minutes on each side or until golden brown.
Remove the doughnuts from the oil and drain on paper towels.
Mix sugar and cinnamon together in a bowl.
Roll the hot doughnuts in the sugar and cinnamon mixture.
