Canadian Poutine

Cultural Context

Poutine originated in Quebec, Canada, in the late 1950s, combining French fries, cheese curds, and gravy into a deliciously indulgent dish. It reflects the region's love for hearty comfort food and has become a symbol of Canadian cuisine. Today, poutine has evolved with countless variations, featuring different gravies and toppings, and is enjoyed across Canada and beyond, often found in diners and food trucks.

gravy

🥗Healthier: mushroom gravy

💰Cheaper: homemade broth

Mushroom gravy is lower in calories and can be made easily at home.

1

Start by cooking bacon and ground round in a large pot, accumulating fat and grease.

2

Crisp thick pieces of bacon for bacon bits.

3

Deglaze the pot with red wine after removing the bacon.

4

Add ground meat and all sauce ingredients, cooking for about 30 minutes.

5

Add onion and carrots, followed by mushrooms, cooking down for about an hour.

6

Add tomato paste after an hour of cooking.

7

Drain mixture into a pan on medium heat, reserving half a cup in a separate bowl.

8

Add flour to the reserved mixture, half a tablespoon at a time, until desired thickness is reached.

9

Set aside the gravy and prepare the signature gravy with mushrooms, tarragon, heavy cream, and garlic.

10

Sauté mushrooms and garlic in olive oil, then add grated cheese to the cream mixture gradually.

11

Simmer the signature gravy for about 10 minutes, then set aside.

12

Prepare chocolate gravy by mixing heavy cream and milk, then adding cocoa mix and sugar.

13

Simmer chocolate gravy for at least 15 minutes until it holds form on a spoon, then strain and filter.

14

Slice russet potatoes into desired thickness without peeling.

15

Rinse sliced potatoes up to five times until water is crystal clear, then dry.

16

Heat oil to 250 degrees Fahrenheit and fry potatoes for five minutes, then freeze for 15 minutes.

17

Refry potatoes at 350 degrees Fahrenheit until crispy on the outside and soft inside.

18

Cube the earlier cooked bacon and fry in Jack Daniels with sugar until crisp.

19

Dress the fries with the prepared gravies and toppings.
