Non-alcoholic wine provides flavor without alcohol.
Cut moose meat into bite-sized pieces, smaller than a ping-pong ball, removing any tough membranes.
Heat olive oil in a large pot until warmed and ensure it covers the bottom.
Add the moose meat to the pot and stir well to brown it.
Remove the browned moose meat from the pot, leaving the brown bits behind.
Add chopped celery, onion, and green pepper to the pot and cook for a few minutes until softened.
Add chopped carrots to the pot and let them cook for a few more minutes.
Return the browned moose meat to the pot.
Pour in the beef broth, adding water if necessary to make up the amount needed.
Add 1 teaspoon of black pepper, 0.5 teaspoons of parsley, 0.5 teaspoons of thyme, and bay leaves to the pot.
Stir everything together and let it stew for about 2 to 3 hours, checking at 2 hours for doneness.
Package the stew into servings, noting that it yields about six servings.
