Cut moose meat into bite-sized pieces.
Season the moose meat with salt and pepper.
Heat olive oil in a slow cooker.
Add the moose meat and brown on all sides.
Remove the browned meat and set aside.
In the same slow cooker, add onions, carrots, and garlic; sauté until softened.
Add tomato sauce and cook for another minute.
Return the moose meat to the slow cooker and pour in the beef broth and red wine.
Add dry thyme leaves and Laurel leaves.
Cover and cook on low for several hours until the meat is tender.
Add potatoes, green peas, and mushrooms; cook until potatoes are tender.
