Preheat the grill to 400°F (200°C), preparing to use indirect grilling by lighting two outside burners to medium and leaving the middle one(s) off.
Season the chicken with your favorite BBQ Seasoning. Wash and peel the carrots, then toss them with Maple Roch Maple Mustard, picked thyme leaves, and season with salt to taste.
Pour your Maple Roch Gourmet Maple Glaze into a bowl and get your BBQ basting brush ready.
Place the Napoleon PRO Chicken Infusion Roaster onto the grill between the lit burners, then fill the bowl with your favorite beer and the chicken stock.
Put the roaster plate on top and then add the flavour cone. Fit the chicken over the cone, using the legs to prop the chicken in an upright position. Arrange the carrots around the base of the chicken.
Close the lid and allow your chicken to cook for 20 to 30 minutes. Open the BBQ and baste with the Maple Roch Gourmet Maple Glaze. Cook another 15 minutes and baste again. Check the internal temperature of the chicken.
Carefully remove the chicken roaster from the BBQ and allow the chicken to rest on a board for at least 10 minutes before carving and serving with the carrots and your other favorite sides.
