Cube 2 to 3 lbs of moose meat from the leg and season with salt and black pepper.

Dust the meat with flour.

Melt a knob of butter in a medium-high preheated Dutch oven.

Add the moose meat to the pot, making sure not to crowd the pan, and brown in batches for about 2 to 3 minutes per batch.

Remove the browned meat from the pot.

Roughly chop one onion and mince two cloves of garlic.

Add the chopped onion to the pot and stir, cooking for about a minute, then add the minced garlic.

Pour in a good glug of red wine and stir.

Next, add 4 cups of beef stock and 2 cups of water.
