Cut moose meat into cubes.

Dredge moose meat in a mixture of 1 cup flour, 1/2 cup cornstarch, salt, and black pepper.

Heat bacon grease in a pot until hot.

Add the dredged moose meat to the pot and brown on all sides.

Add 3/4 cup chopped onions to the pot.

Stir in a few sprigs each of parsley, sage, rosemary, and thyme.

Add 6 oz of tomato paste to the pot and stir.

Pour in 1 bottle of dark beer and stir to combine.

Add cubed turnips, carrots, red russet potatoes, and 1/2 rutabaga to the pot.

Pour in enough beef stock and vegetable broth to cover the vegetables and meat.

Add a pinch of sugar and more salt and pepper to taste.

Add 1/3 stick of butter to the pot.

Cover the pot and place it in the oven at 250°F for 5 hours.
