Cut the potatoes into 1 cm strips.

Add in cold water and let sit for 1 hour.

After an hour, dry well the potatoes and lightly fry at 150 C for 5 minutes.

Remove, place on a cooling rack, and let freeze for an hour.

In a saucepan, add the butter and let it melt. Add the flour and mix well allowing the flour to cook.

Add the beef stock, salt, pepper, Worcestershire sauce. Mix well and let cook until thickened and reduced.

Return the fries and fry at 190 C until golden brown and crispy.

Serve the fries on a plate, add some cheese curds, and pour the gravy over.
