1

Take a piece of pork belly and cut it into two pieces.

2

Remove the skin from the pork belly.

3

Weigh each piece of pork belly individually.

4

Prepare the cure by weighing out brown sugar and salt for each piece of meat.

5

Mix the cure with the pork belly in Ziploc bags, adding the maple flavored syrup.

6

Rub the cure mixture into the meat, ensuring it's well coated.

7

Seal the bags and place them in the fridge for 5-7 days, turning them over daily.

8

After 11 days, remove the pork belly from the bags and rinse it under water to remove excess salt and cure.

9

Preheat the oven to 140 degrees Celsius.

10

Place the pork belly in the oven and cook for 1 hour.

11

Use a meat thermometer to check for an internal temperature of 64 degrees Celsius.

12

Once cooked, remove the bacon from the oven and let it cool completely before refrigerating.

13

Slice the cooled bacon and pan-fry it until crispy.
