Separate egg yolks and egg whites.

In a mixing bowl, using a stand or hand mixer, add egg whites and cream of tartar. At a low speed, beat until eggs frothed up.

Once the eggs have frothed up add sugar gradually. When all sugar has been added, turn to high speed gradually. Beat until it holds a nice peak.

Preheat oven to 350°F.

Spray or brush baking sheet with oil (Note: Do not use olive oil).

Line with parchment paper. Spray and brush parchment paper with oil.

Spread the meringue evenly.

Decorate the top with baking comb or using a fork.

Bake for 25 mins or until top turns to brown.

Over low heat, add beaten egg yolks. Stir continuously.

Add condensed milk. Still stirring continuously.

Add a pinch of lemon zest. Still stirring continuously.

Once you reach the thick paste texture, add butter and vanilla extract. Stir until well combined.

Turn off the heat. Set aside and let it cool.

Once meringue is cooked, remove from the oven and let it cool for 10 mins.

Generously, dust top of meringue with powdered sugar.

Run the spatula around the edges to loosen up the sides from the parchment paper.

Put parchment paper on top.

Put baking sheet on top.

Flip the baking sheet.

Remove the parchment paper.

Spread the custard filling, leaving 1/4 of meringue without filling.

Roll meringue from the side with custard filling.

Cut both edges at least 1 inch thick.
