Separate the egg whites from the watery part using a strainer, placing the thicker egg whites in a bowl.

Heat water in a pot and add a tablespoon of white vinegar.

Bring the water to a boil, then turn the heat down to low so there are no bubbles but the water is still hot.

Create a vortex in the water and drop the egg into the center of the vortex.

Repeat the vortex and egg drop for the second egg, being careful not to disturb the first egg.

Set a timer for 4 minutes to poach the eggs.

Once the timer goes off, remove the eggs and place them on a paper towel to drain.

Toast the gluten-free bread and butter it.

Smash the avocado on the toast, adding salt and pepper to taste.
