Heat a cast iron pan until smoking hot, between 400 and 500 degrees Fahrenheit.
Pan fry the steak for about 1 minute on each side.

Deglaze the pan with Madeira wine, scraping up the stuck bits.
Add about 2 tablespoons of butter to the deglazed pan and let it melt into the sauce.
Boil new potatoes in salted water, then let them dry in a colander.
Saute the boiled potatoes in vegetable oil until crispy, then season with salt, black pepper, and fresh rosemary.
Fry the egg in a non-stick pan over medium to low heat until the white is set and the yolk is still runny.
Serve the steak topped with the fried egg, drizzled with the butter sauce, alongside the sautéed new potatoes.
