1/2 cup filtered water
4 bay leaves

In a large bowl, add 4 chicken drumsticks and 4 bone-in chicken thighs.

Add 20 cloves of heavily crushed garlic.

Add a small crack of black pepper and 1 tbsp of whole black peppercorns.

Add 3 tbsp of palm sugar, breaking it down if necessary.

Add 1 and 1/4 cup of unseasoned rice vinegar, 1/4 cup of dark soy sauce, and 1/2 cup of regular soy sauce.

Add 1/2 cup of filtered water and 4 bay leaves.

Cover with plastic wrap and marinate in the fridge for 2 hours, ideally overnight.

Reserve all marinating liquid after marination.

Heat a large brazer or Dutch oven over medium-high heat with enough oil to coat the bottom.

Sear chicken pieces in batches for 2 to 3 minutes per side until browned.

Remove chicken after browning and set aside.

Add marinating liquid and aromatics to the pan, increase heat to medium-high, and bring to a boil.

Once boiling, reduce to low and cover, cooking for 35 minutes.

Uncover, turn chicken pieces, cover again, and cook for an additional 25 to 35 minutes, turning occasionally until tender and sauce thickens.
