1 kilo chicken thigh
⅓ cup soy sauce
⅓ cup vinegar
1 thumb ginger
7 cloves of garlic (minced)
½ teaspoon black pepper
1 teaspoon whole peppercorns
3 pieces dried bay leaves
1 cup water
½ tablespoon sugar (optional)

Wash and prepare the chicken thighs.

Transfer the chicken to a bowl and add the soy sauce, vinegar, and black pepper. Massage well and marinate for at least 1 hour.

Heat a pan (no oil). Arrange the chicken in the pan, skin side down. Sear on both sides until light brown. Remove from the pan and set aside.

Using the same pan, add the ginger and garlic and sauté briefly.

Add the chicken back to the pan along with the bay leaves, whole peppercorns, and reserved marinade. Optionally, add sugar.

Add water, cover the pot, and let it simmer for 25 to 30 minutes over low medium heat. Stir occasionally to cook evenly until the sauce is reduced and the fat starts to render.

Transfer the chicken adobo to a serving plate and serve hot with rice.
