Preheat the oven to 350°F (175°C).

Prepare a butterflied lamb leg by removing the bone and cutting the meat to about an inch thick.

In a bowl, combine 1/2 cup extra virgin olive oil, 2 tablespoons fresh squeezed lemon juice, and the zest of 1 lemon.

Add 1 teaspoon garlic powder, 1 teaspoon onion powder, and 1 teaspoon sea salt to the mixture and whisk together.

Chop 1 bunch of fresh parsley, 4 tablespoons of fresh rosemary, and 3 tablespoons of fresh thyme, then add to the bowl and mix well.

Place the butterflied lamb leg in a ceramic baking dish.

Pour the herb mixture over the lamb and use a spatula to press it onto the meat.

Put the baking dish in the preheated oven and roast the lamb for 15 minutes.

Check the internal temperature after 15 minutes; it should reach 135°F (57°C) to pull it out.
