Dice one large carrot (or two smaller ones) and set aside.

Dice half of a small yellow onion and set aside with the carrot.

Thinly slice four green onions, separating the green and white parts, and set aside.

Place the carrots, onion, and white parts of the green onion in one prep bowl, and the green parts in another.

Minced about 1/2 teaspoon of ginger and add to the prep bowl with the vegetables.

Measure out 1 cup of frozen peas and set aside (no need to thaw).

Crack three large eggs into a mixing cup or bowl and lightly beat them together.

Heat a wok or large pan over medium-high heat.

Add about 2 tablespoons of high-heat oil to the heated pan.

Add the diced carrots and onion to the pan and sauté for about 2-3 minutes.

Add two minced garlic cloves and the minced ginger to the pan and sauté for another 30 seconds.
