Originating from the coastal regions of Bulgaria, Feta & Herb Salmon showcases the country's love for fresh seafood and bold flavors. Traditionally, fish is often paired with local herbs and cheeses, creating a delightful balance of taste and nutrition. In modern times, this dish has gained popularity beyond Bulgaria, celebrated for its simplicity and health benefits, making it a favorite in many households.

Goat cheese offers a similar tangy flavor with fewer calories.

Canola oil is more budget-friendly while still providing good cooking properties.
Chop chives and add them to a large bowl.
Chop fresh oregano and add it to the same bowl.
Chop parsley and add it to the bowl.
Chop fresh rosemary and add it to the bowl.
Add the juice of 1/2 lemon and the zest of 1/2 lemon to the bowl.
Add 1/2 cup of Bulgarian feta cheese to the bowl.
Season the mixture with salt and black pepper, then mix until combined.
Take 1 lb of wild caught Alaskan salmon and generously season the skin side with salt and black pepper.
Spread the feta herb and lemon mixture on top of the salmon, using the back of a spoon to pat it down evenly.
Place the salmon in the oven on the middle rack at 400°F for about 20 to 22 minutes.
Once done, plate the salmon with some lemon and fresh herbs.
