In a pot on high heat, add water, sugar, food coloring, and ground cardamom to make the syrup.
Mix the ingredients well and allow it to boil until it reduces by about a third and thickens slightly.
Turn the stove to low and keep the syrup on heat to prevent crystallization.
In a bowl, add gram flour, melted butter or ghee, baking powder, ground cardamom, and food coloring to make the batter.
Mix the batter well and add water a little at a time until you achieve a thick, slightly runny consistency.
Heat oil in a pan.
Press the batter through a large spoon with holes to create boondis and fry for about a minute until they are nicely golden brown.
Remove the boondis from the oil and add them into the syrup, allowing them to soak up a little.
Place the soaked boondis into a bowl, then add chopped coconut, chopped almonds, and cardamom.
Mix everything well using your hands until it becomes slightly sticky and can hold its shape.
Portion out the mixture using your hands or an ice cream scoop for even portions.
Roll the portions between your hands firmly and roll them in some coconut or colored almond.
