500g pork shoulder
¾ cup water
Vegetable oil
3 cloves garlic, grated
1 shallot, grated
1 tsp ginger, grated
¼ tsp salt
½ tsp five spice powder
2 tbs fermented soy bean (tauco)
2 tbs sweet soy sauce
1 cucumber, sliced thinly
¼ tsp salt
5 red chilli, cut roughly (retain seeds for extra heat)
1 tbs apple cider vinegar
1 tbs sugar
½ tsp salt

Prepare salted cucumber and pickled chilli condiments.

Drain all the excess liquid and set cucumber aside.

Into a blender, add chilli, apple cider vinegar, sugar, and salt.

Blend until smooth and set aside.

Heat some vegetable oil in a pan to medium heat.

Add pork and sear the outer layer on both sides until charred and sealed.

Add marinade and water and mix through.

Once the liquid starts to bubble, reduce to low heat and cook covered for 15 mins.

Turn the pork and cook covered for another 15 mins.

Remove the cover and cook for another 15-20 mins turning the pork occasionally.

Once the sauce has reduced and thickened, remove the pork from the pan and allow to rest for 10 mins.

Slice the pork and toss through the sauce (without heat).

Serve with salted cucumber and pickled chilli condiments.
