2 eggs
6 cloves of garlic, finely minced
3 shallots, finely minced
5 tbsp sugar
1 1/2 tbsp salt
1 tbsp sesame sauce/tahini
2 pieces red fermented bean curd, crashed
2 tbsp soy sauce
1 tsp five spice powder
1 tbsp rice wine
2 tbsp red yeast rice powder
8 oz/225 g maltose
2 tbsp water
2 1/2 tbsp sugar
2 slices of ginger
1/2 tbsp salt

Prepare the marinade by mixing together eggs, minced garlic, minced shallots, sugar, salt, sesame sauce, red fermented bean curd, soy sauce, five spice powder, rice wine, and red yeast rice powder.

Marinate the pork shoulder in the mixture for several hours or overnight.

Prepare the glaze by combining maltose, water, sugar, ginger, and salt in a saucepan and heating until combined.
