Start by boiling beef shank and bone marrow in a large pot of water.
Simmer until the beef is tender, which takes about 2-3 hours.
Skim off any foam that rises to the surface during simmering.
Add onion, garlic, and peppercorns to the pot and continue to simmer for 30 minutes.
Incorporate a mixture of garlic and chili sauce with vinegar and soy sauce instead of fish sauce.
Add potatoes and corn, cooking until tender, about 15-20 minutes.
Stir in cabbage and cook until wilted, about 5 minutes.
Serve the soup with rice, and enjoy it with a side of chili and calamansi.
