Bulalo
Cultural Context
Bulalo, originating from the Batangas region of the Philippines, is a comforting beef soup traditionally enjoyed during family gatherings and special occasions. The dish highlights the rich flavors of beef and bone marrow, simmered to create a hearty broth. Today, Bulalo is celebrated nationwide and often served in restaurants, showcasing its popularity beyond its regional roots.

Chicken thighs provide a leaner option while pork shank is often less expensive.

Mushrooms add umami without the fat, while beef bones are more affordable.
Fill the pot with water, and on medium heat boil the osso buco for about 2 hours until the meat is tender.
Separate the meat and put it aside, and strain the broth.
Put the broth back to the pot, and on high heat, add onions and whole pepper, and bring to boil.
Once boiling, add your potatoes & corns, and lower to medium heat and simmer close lid for about 10/15 mins or until the potatoes are half cooked.
Add osso buco and season it with fish sauce and salt (adjust to your taste accordingly) and simmer close lid for 10 mins on medium heat.
Add cabbage chinese wombok and simmer it for another 5 mins.
Serve & Enjoy.
