The dish highlights the rich flavors of beef and bone marrow, simmered to create a hearty broth. Today, Bulalo is celebrated nationwide and often served in restaurants, showcasing its popularity beyond its regional roots.

Mushrooms add umami without the fat, while beef bones are more affordable.
Preheat the oven to a low broil setting, around 475°F.
Drizzle refined organic coconut oil over the beef bones on a cookie sheet lined with parchment paper.
Massage the oil into the bones to coat them evenly.
Place the cookie sheet with the bones in the oven to roast until caramelized, checking to avoid burning.
Once caramelized, remove the bones from the oven and transfer them to an 8-quart Instant Pot.
Pour the drippings from the cookie sheet into the Instant Pot with the bones.
Add 2 quarts of filtered water to the Instant Pot, ensuring the bones are covered.
Add veggie scraps including celery, onion, and a few carrots to the pot.
Add 1 head of garlic to the pot, keeping it whole.
Seal the Instant Pot with the lid, ensuring it is set to the venting position.
Cook on the slow cook setting for up to 20 hours, or use the pressure setting for a quicker cook time.
