Prepare the panna cotta by combining 250ml of fresh cream, 40g of sugar, and drops of vanilla essence in a saucepan. Heat gently until the sugar dissolves.
Add 1/2 dose of gelatin to the mixture and stir until fully dissolved.
Pour the panna cotta mixture into serving glasses and refrigerate until set.
For the mango gelatin, puree the mango to yield 200ml of mango puree.
Mix the mango puree with 200ml of water and 40g of sugar (adjust based on the sweetness of the puree).
Add 1/2 dose of gelatin to the mango mixture and stir until dissolved.
Once the panna cotta is set, pour the mango gelatin over it and refrigerate again until firm.
