Instructions
- 1Heat heavy cream, sugar, and vanilla bean in a saucepan over medium heat until sugar dissolves.
- 2Soak gelatin in cold water until softened, about 5 minutes.
- 3Remove cream mixture from heat and stir in soaked gelatin until fully dissolved.
- 4Pour the cream mixture into serving cups and refrigerate until set, about 4 hours.
- 5Blend strawberries with lemon juice until smooth to create a sauce.
- 6Strain the strawberry sauce to remove seeds, if desired.
- 7Once panna cotta is set, top with strawberry sauce and garnish with mint leaves.

- ●1 ripe mango, pureed

- ●1/4 tsp salt
Instructions
- 1In a small bowl, sprinkle the gelatin over the cold water and let it sit for about 5 minutes to bloom.
- 2In a saucepan, combine the coconut milk, heavy cream, sugar, and salt. Heat over medium heat until the sugar dissolves and the mixture is warm, but not boiling.
- 3Remove the saucepan from heat and stir in the bloomed gelatin until fully dissolved.
- 4Add the vanilla extract and mix well.
- 5Pour the mixture into individual serving cups or molds, filling them about 3/4 full.
- 6Refrigerate for at least 4 hours or until set.
- 7Once set, top each panna cotta with a layer of mango puree.
- 8Garnish with fresh mango slices or shredded coconut if desired.
- 9Serve chilled.
