Instructions

  1. 1Heat heavy cream, sugar, and vanilla bean in a saucepan over medium heat until sugar dissolves.
  2. 2Soak gelatin in cold water until softened, about 5 minutes.
  3. 3Remove cream mixture from heat and stir in soaked gelatin until fully dissolved.
  4. 4Pour the cream mixture into serving cups and refrigerate until set, about 4 hours.
  5. 5Blend strawberries with lemon juice until smooth to create a sauce.
  6. 6Strain the strawberry sauce to remove seeds, if desired.
  7. 7Once panna cotta is set, top with strawberry sauce and garnish with mint leaves.

  • 2 cups coconut milk
  • 1/2 cup heavy cream
  • 1/2 cup sugar
  • 1 packet (2 1/4 tsp) unflavored gelatin
  • 1/4 cup cold water
  • 1 ripe mango, pureed
  • 1 tsp vanilla extract
  • 1/4 tsp salt

Instructions

  1. 1In a small bowl, sprinkle the gelatin over the cold water and let it sit for about 5 minutes to bloom.
  2. 2In a saucepan, combine the coconut milk, heavy cream, sugar, and salt. Heat over medium heat until the sugar dissolves and the mixture is warm, but not boiling.
  3. 3Remove the saucepan from heat and stir in the bloomed gelatin until fully dissolved.
  4. 4Add the vanilla extract and mix well.
  5. 5Pour the mixture into individual serving cups or molds, filling them about 3/4 full.
  6. 6Refrigerate for at least 4 hours or until set.
  7. 7Once set, top each panna cotta with a layer of mango puree.
  8. 8Garnish with fresh mango slices or shredded coconut if desired.
  9. 9Serve chilled.
