1 Tsp Garam Masala
0.5 Tsp Pav Bhaji Masala (Optional)

To a wide skillet, add oil and onions. Saute until the onions are transparent.

To this add green chillies and saute.

Once the onions are browned add ginger garlic paste and saute.

Now add tomatoes and saute.

To this add salt, turmeric powder, chilli powder, cumin powder, coriander powder and cook for 2 mins.

Add water to stop the frying and mix.

Keep the flame on medium and add the eggs to the masala.

Mix until the eggs are cooked.

Now grate the boiled eggs into the skillet and mix well.

Add chaat masala, garam masala, pav bhaji masala powder (optional) and mix.

Finally add butter and coriander leaves and mix it in.

Once the eggs are completely cooked, shift the bhurji to a side of a skillet. Crack open two eggs to make half boiled egg.

Sprinkle salt, chilli powder, pepper and let it cook in the slow heat from the bhurji.

On the side add some butter and toast the pav buns.

Garnish with some onions and coriander leaves.
