This gelatinous meat dish showcases the resourcefulness of Romanian cuisine, utilizing every part of the animal. It's a beloved comfort food, enjoyed for its rich flavor and unique texture. In modern times, variations exist, with some households opting for chicken or beef instead of pork, making it accessible to a wider audience.

Chicken thighs reduce fat while still providing flavor.

Place pork knuckles and meat in a large pot and cover with water.
Add chopped carrots, onions, garlic, bay leaves, and peppercorns.
Bring to a boil over medium heat, skimming off any foam that forms.
Reduce heat and simmer for 4-5 hours until meat is tender and falling off the bone.
Remove the meat and vegetables from the pot, reserving the broth.
Strain the broth through a fine sieve to remove solids.
Let the broth cool slightly, then add gelatin and stir until dissolved.
Shred the meat into small pieces and distribute evenly into serving molds.
Pour the broth over the meat in the molds, ensuring it's fully covered.
Refrigerate for several hours or overnight until set and firm.
To serve, unmold the piftie onto a platter and garnish with fresh herbs.
