Add 1 tablespoon cooking oil to a pan and heat it lightly.

Add 3-4 whole red chilies and fry until crispy for 1-2 minutes; this step is optional.

Remove the fried red chilies and set them aside.

In the same oil, add 1 teaspoon cumin seeds, 4-5 whole black peppercorns, and 1 piece of cinnamon stick; fry lightly.

Add 1/2 tablespoon ginger garlic paste and fry for 1 minute.

Add water according to the amount of rice being used and mix in salt to taste.

Add 1 cup rice and 1/2 cup lentils that have been washed and soaked for 15-20 minutes; mix well and adjust salt if needed.

Cover and cook on medium flame for 10-12 minutes until the water is almost dry.

Check that the water has reduced; lower the flame and cover to let it steam on low for 10 minutes.

After 10 minutes, check if the rice is well cooked; serve the khichdi.
