Add chopped carrots, onion, and cauliflower to the pot and cook for about 5 minutes, mixing occasionally.

Add 50 grams of frozen green peas and fry for an additional 2 minutes.

Stir in 1 tablespoon of ground coriander seeds, 0.5 tablespoon of ground cumin seeds, 1 teaspoon of turmeric, and 1 teaspoon of ground red chili, mixing well with the vegetables.

Add the soaked rice and lentils to the pot along with salt to taste, mixing everything together.

Pour in about 6 cups of water, ensuring the mixture is thick like porridge, not too thin or too dry.

Bring the mixture to a boil, then reduce the heat to medium and cover the pot with a lid.

Check occasionally to see how the khichdi is cooking, adding more water if necessary, and adjust the heat as needed.
