Add rinsed rice and lentils to the pot, stirring to coat in the ghee.
Mix in turmeric and salt, ensuring even distribution.
Pour in water, bringing the mixture to a boil.
Reduce heat to low, cover, and simmer for 20-25 minutes until rice and lentils are tender.
Stir in chopped vegetables, cooking for an additional 5-10 minutes until heated through.
Remove from heat and let sit covered for 5 minutes before serving.
Fluff with a fork and serve hot.
