onion – 9 oz | 260 g
sour cream – 5 oz | 150 g
tomato paste – 1,5 tbsp
butter – 1 oz | 30 g
all-purpose flour – 1 tbsp
vegetable oil – 4 tbsp
mustard – 1 tbsp
fresh parsley – 1 tbsp | 5 g
water – 3 fl oz | 100 ml
ground black pepper – ⅓ tsp
salt – 1½ tsp

Rinse the beef liver, dry, remove the membrane and cut major vessels and vein lines out.

Cut into strips not too thinly and sprinkle with flour, cut the onion into half rings.

Heat a pan, add 2 tbsp of vegetable oil and fry the onion until readiness for about 8 minutes over medium heat, the onion is to become soft and sweet.

Push the fried onion to sides and add the tomato paste into the center, fry for 30 seconds over low heat, add the mustard and butter, stir.

Add then the sour cream, ½ tsp of salt, ⅓ of black pepper and 3 fl oz | 100 ml of water, stir, bring to a boil and cook over low heat for a minute.

Heat the second pan with 2 tbsp of vegetable oil, lay out the prepared liver in one layer, add 1 tsp of salt, fry over medium heat for a minute, stir and keep frying stirring constantly for another 2-3 minutes over medium heat. Add into the first pan and stir.

Add the chopped parsley and simmer over low heat for 2 minutes.

Switch the heat off and leave the liver in the hot pan for 2-3 minutes.
