Show the ingredients: shrimp, chicken bouillon cube, rice, onion, garlic, cilantro, bell pepper, carrot, and water.
Start by washing and cleaning the shrimp, removing the shells with a knife.
Place the cleaned shrimp in the refrigerator to keep them fresh.
In a pot, add the shrimp shells and water, along with cilantro, onion, and bell pepper; bring to a boil.
Chop the onion and add it to the pot with the shrimp shells and vegetables.
Strain the mixture to remove the shells and keep the broth.
Add rice to the broth and stir.
Add the chopped carrot, cilantro, and garlic to the pot and mix well.
Add a chicken bouillon cube and a seasoning packet with cilantro and achiote for color.
Pour in more water from the boiling shrimp shell broth as needed.
Taste the broth and add another chicken bouillon cube if needed for salt.
After 5 minutes, add the shrimp to the pot, as they cook quickly and should not be overcooked.
Cook for 6 minutes on medium heat after adding the shrimp, then serve the asopao.
