Prepare the chicken salt by mixing kosher salt, chicken stock, sweet paprika, garlic powder, onion powder, ground mustard, celery seed, and cornstarch in a bowl.
Preheat the Weber grill for indirect and direct grilling at high temperature.
Season the minced brisket and chuck with kosher salt and form into patties.
Cook the beef patties on the grill until they reach an internal temperature of 74°C (165°F), about 4-5 minutes on each side.
During the last minute of cooking, place a slice of cheddar cheese on each beef patty to melt.
In the meantime, grill the frozen potato cakes until golden brown and heated through, about 3-4 minutes per side.
Assemble the burger by placing a beef patty on the bottom bun, topping it with a potato cake.
Spread mayonnaise, ketchup, yellow mustard, and Sriracha sauce on the top bun before closing the burger.
