The addition of sweet potato gnocchi brings a modern twist, blending Italian and Indian culinary traditions, making it a delightful fusion dish.

Brine the goat legs overnight with salt and pepper.
Season the goat legs with additional salt and pepper, and drizzle with olive oil.
Roast the goat legs in the oven at 400-450°F for about 1 hour to achieve an even sear.
Julienne the onions and chop fresh turmeric and ginger.
Caramelize the onions in a pot with a little salt, then add ginger and turmeric to sweat out the flavors.
Tear a habanero and add it to the pot, allowing the colors to bleed out of the turmeric.
Make a sachet with cinnamon sticks, star anise, cloves, fresh curry leaves, and green cardamom, tying it up to keep the spices contained.
Add garam masala to the pot, followed by the sachet, and then pour in chicken stock to simmer.
Roast sweet potatoes at 350°F until soft, then mash them until smooth with no lumps.
Separate the egg yolks from the whites and add them to the mashed sweet potatoes.
Mix in all-purpose flour until the dough is soft and not too sticky, resembling Play-Doh.
Knead the dough slightly, then cut it into logs and flour them before cutting into 1-inch pieces to form gnocchi.
Chill the gnocchi in the fridge until ready to finish the ragu.
Baste the goat leg every half hour while it roasts and shallow braises at 350°F for about 3 hours.
Check the goat for tenderness; it should fall off the bone easily.
Remove the goat leg and add the sachet back into the pot.
Strain the spices from the sauce, then add coconut milk to finish the jus.
Cut the goat meat into 1-inch cubes and add it back into the reduced jus.
