2 tbsp sugar
1 onion
1 cup cooking oil
6 cloves of chopped garlic
1 chickenbouillon cube
2 bay leaves
6 allspice berries
Black Sweet and Salty Soy Sauce
1 cup hot water
1 tbsp laos powder
1 tbsp kentjoer powder

black soy sauce

🥗Healthier: low-sodium soy sauce

💰Cheaper: regular soy sauce

Low-sodium soy sauce reduces sodium content while regular soy sauce is more accessible.

brown sugar

🥗Healthier: coconut sugar

💰Cheaper: white sugar

Coconut sugar is less processed and has a lower glycemic index.

chicken pieces

🥗Healthier: tofu

💰Cheaper: chicken thighs

Tofu provides a plant-based option, while chicken thighs are often less expensive than breasts.

1

Chop the chicken thighs into 3 or 4 pieces, thoroughly clean the chicken, and wash it with vinegar or lemon.

2

Add cooking oil and sugar to the pan. Slice 1 onion into thin half-moons and add this to the pan.

3

Once the sugar is caramelized, add onion, bay leaves, allspice berries, chopped garlic, and chickenbouillon cube. Let the onions fry until lightly browned.

4

Add a dash of sweet and salty soy sauce and all the spices (laos powder, kentjoer powder, black pepper, and adjinomotto). Mix everything together well and add 1 cup hot water.

5

Add chicken and salt to taste. Turn the heat to medium-high and cook the chicken with the lid on the pan for 10-15 minutes. Stir regularly to prevent burning at the bottom.

6

After 15 minutes, add chopped celery, mix together well. Cook the chicken until done over low heat.

7

Preheat the oven to 180 degrees Celsius. Transfer the chicken to an oven dish and bake or grill it for 7-8 minutes in the oven at 175-180 degrees Celsius.
