80 g Schär flour Mehl Farine
60 g potato starch
1 egg

Boil the potatoes in their skins, let them cool, and then peel them. Grate the potatoes finely.

Place the grated potatoes on a work surface, add the flour, potato starch, and salt, and mix gently. Finally, add the egg and knead into a smooth dough.

From this mixture, form two rolls. Place the dumplings into boiling salted water and cook for about 20 minutes.

After the cooking time, remove the dumplings from the water and let them cool for a while. Then cut them into slices about 1 - 1.5 cm thick using kitchen twine.
