In a mixing bowl, combine mashed potatoes, flour, egg, and salt until a dough forms.

Knead the dough gently on a floured surface until smooth, about 2-3 minutes.

Divide the dough into equal portions and roll each into a rope about 1 inch thick.

Cut the ropes into 1-inch pieces to form dumplings.

Bring a large pot of salted water to a boil and reduce to a simmer.

Drop the dumplings into the simmering water and cook until they float, about 5-7 minutes.

Remove dumplings with a slotted spoon and drain well.

In a skillet, melt butter over medium heat and add bread crumbs.

Toast the bread crumbs until golden brown, about 3-4 minutes.
