1 cup flour

Start with 1 cup of room temperature mashed potatoes.

Add 1 cup of flour, reserving a quarter for dusting.

Crack 1 large egg into a bowl and mix with the potatoes and flour to form a dough.

Dust a butcher board with flour and roll out the dough.

Cut the dough into four portions and roll each into sausage shapes.

Cut the rolled dough into half-inch pieces to form dumplings.

Bring a pot of salted water to a boil, adding between half a teaspoon to a teaspoon of salt.

Blanch the dumplings in boiling water for about 8 minutes, cooking them in batches.
