Boil Russet potatoes.

Dice one roll from the day before.

Toast bread in 1 tbsp butter.

Wash the other half of uncooked Russet potatoes and peel.

Grate the uncooked Russet potatoes into a bowl with a cotton towel that hangs over the edge.

Use the cloth to squeeze out the grated potatoes, catching the potato water and setting it aside.

Place the grated potatoes in another bowl.

Peel the boiled potatoes.

Push the cooked potatoes through a potato press.

Add the boiled potatoes to the grated ones.
